2 tbsp ground flax mixed with 5 tbsp water 1/2 cup vegan butter softened 1 cup light brown sugar packed 1 tsp pure vanilla extract 2 1/2 cups all-purpose flour 2 tsp baking powder 1/2 tsp salt 1/2 cup vegan mini chocolate chips 1/2 cup chopped walnuts 1/2 cup pistachios 1/2 cup dried cranberries

Preheat oven to 350°F. Line a large baking sheet with parchment paper.

Sir together ground flax and water in a small bowl and set aside for 5-10 minutes to thicken.
