

Everybody knows what to do when bananas go brown: make banana bread. But is that really the only use for overripe bananas? Isn’t there anything else you can make with them?
Yes, there is!
Banana bread donuts are my current obsession. They’re quicker to make than banana bread, more portable, and well… they’re donuts! Who can say no to donuts?
These baked donuts are also great for fall, especially when topped with maple glaze. The cinnamon and maple flavors would pair perfectly with a nice latte or a cup of chai tea. Add a blanket and a Halloween movie, and you’ve got a perfect fall day!
If you’re looking to switch things up, you can always add chopped nuts, fruit, or even chocolate chips to your donut batter. You could even switch out the maple glaze for a chocolate glaze by melting down some chocolate chips! The possibilities are endless.

Banana Bread Donuts With Maple Glaze (Vegan)
What's better than a loaf of banana bread? Banana bread donuts! Topped with a rich maple glaze, these baked donuts are moist, sweet, and delicious.
Ingredients
For the Banana Donuts
- 2 tbsp ground flax
- 6 tbsp water
- 4 medium ripe bananas mashed
- 1 1/2 cup all purpose flour
- 1/2 cup granulated sugar
- 1/4 cup vegan butter melted
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- Pinch of salt
For the Maple Glaze
- 1 tbsp vegan butter melted
- 1/3 cup pure maple syrup
- 1/2 cup powdered sugar
- 1/4 tsp cinnamon
- 1/4 tsp vanilla extract
Instructions
For the Banana Donuts

Preheat oven to 350°F. Lightly grease two standard donut pans.

In a small bowl, stir together the ground flax and water. Set aside to thicken for 5 minutes.

In a large mixing bowl, mash the ripe bananas. Mix in the flour, sugar, melted butter, vanilla, baking powder, baking soda, cinnamon, nutmeg, and salt. Finally, stir in the flax mixture, being careful not to overmix.

Fill the greased donut pans 3/4 of the way full with batter (use a piping bag for less mess). Bake for 10 minutes, then transfer donuts to a wire rack to cool.
For the Maple Glaze

In a medium microwave-safe bowl, melt the vegan butter. Whisk in the maple syrup, powdered sugar, cinnamon, and vanilla until smooth.

Dip the top of each donut in the glaze, then return to rack with glaze-side-up to set. Repeat 1 or 2 more times for a thicker coating of glaze.
