For the Quesadillas:

2 large avocados 4 medium flour tortillas

Step 1

Heat the olive oil in a large skillet over medium heat-high heat.

Add the garlic, bell pepper, zucchini, onion, and jalapeño and cook for about 5 minutes, stirring frequently.
