Having grown up in a half-Japanese household, I have definitely eaten my fair share of matcha flavored desserts. Matcha, for those who don’t know, is a special kind of high quality green tea powder that comes from Japan. It has a unique taste that lends itself well to sweets and is used in many traditional Japanese recipes. However, matcha can also be incorporated into American favorites such as frappuchinos, ice cream, and even pancakes!
Adding matcha powder to pancakes is one of my favorite ways to use this ingredient, since it gives the pancakes a nice green hue, as well as an interesting and exciting flavor. Throwing some chocolate chips into the mix makes it even better! It’s much easier to justify eating chocolate for breakfast when it’s paired with a healthful green tea powder packed with antioxidants (just kidding – chocolate for breakfast is always a good idea!)

Matcha Green Tea Chocolate Chip Pancakes (Vegan)
These pancakes have all the sweetness and fluffiness of traditional pancakes, without the dairy and eggs. Plus, they contain matcha green tea powder, giving them a unique flavor and an added health boost!
Ingredients
- 1 cup all purpose flour
- 2 tbsp granulated sugar
- 1 tbsp matcha powder
- 1/2 tsp kosher salt
- 2 tsp baking powder
- 1 tbsp vegetable or canola oil
- 1 1/4 cups cold water
- 1/2 cup dairy-free chocolate chips
Suggested Toppings (optional):
- Chocolate chips
- Sliced fruit
- Maple syrup
- Granola
Instructions

Whisk together flour, sugar, matcha, salt, and baking powder in a mixing bowl.

Make a well in the center of the dry ingredients and pour in the oil.

Gradually whisk in the water until a smooth batter forms.

Heat a greased pan over medium heat.

Pour ladlefuls of pancake batter onto the pan and press several chocolate chips (about 2 tsp) into each pancake.

Cook until bubbles have risen to the surface of the pancakes and popped.

Flip and cook for an additional 1-2 minutes.

Repeat steps 5-7 until no batter remains, regreasing the pan as necessary.

Stack 'em high and add your toppings of choice.
