Vegan Banana Bread Donuts With Maple Glaze

Vegan Banana Bread Donuts are quicker to make than banana bread. They are also great for fall, especially when topped with maple glaze.

Everybody knows what to do when bananas go brown: make banana bread. But is that really the only use for overripe bananas? Isn’t there anything else you can make with them?

Yes, there is!

Banana bread donuts are my current obsession. They’re quicker to make than banana bread, more portable, and well… they’re donuts! Who can say no to donuts?

These baked donuts are also great for fall, especially when topped with maple glaze. The cinnamon and maple flavors would pair perfectly with a nice latte or a cup of chai tea. Add a blanket and a Halloween movie, and you’ve got a perfect fall day!

If you’re looking to switch things up, you can always add chopped nuts, fruit, or even chocolate chips to your donut batter. You could even switch out the maple glaze for a chocolate glaze by melting down some chocolate chips! The possibilities are endless.

How to Make Vegan Banana Bread Donuts With Maple Glaze

For the Banana Donuts

  1. Preheat oven to 350°F. Lightly grease two standard donut pans.
  2. In a small bowl, stir together the ground flax and water. Set aside to thicken for 5 minutes.
  3. In a large mixing bowl, mash the ripe bananas. Mix in the flour, sugar, melted butter, vanilla, baking powder, baking soda, cinnamon, nutmeg, and salt. Finally, stir in the flax mixture, being careful not to overmix.
  4. Fill the greased donut pans 3/4 of the way full with batter (use a piping bag for less mess). Bake for 10 minutes, then transfer donuts to a wire rack to cool.

For the Maple Glaze

  1. In a medium microwave-safe bowl, melt the vegan butter. Whisk in the maple syrup, powdered sugar, cinnamon, and vanilla until smooth.
  2. Dip the top of each donut in the glaze, then return to the rack with glaze-side-up to set. Repeat 1 or 2 more times for a thicker coating of glaze.
  3. Enjoy!

Additional Tips

  • Ripe Bananas: For the best flavor and natural sweetness, ensure that the bananas used for mashing are fully ripe. The riper the bananas, the more intense and delightful the banana flavor in the donuts.
  • Piping Bag Convenience: When filling the donut pans with batter, consider using a piping bag. This not only makes the process less messy but also allows for more precise and uniform distribution of the batter, resulting in evenly baked and beautifully shaped donuts.
  • Glaze Consistency: Adjust the consistency of the maple glaze to your liking. If you prefer a thinner glaze, you can add a bit more maple syrup. For a thicker glaze, increase the amount of powdered sugar. Experiment to find the perfect balance that suits your taste preferences.
